Recipe of the Season

Polish cooking is very seasonal, with light fare for the summer and hearty food for chilly winter days. Look out for recipes here, as they will change with the season!

 

Cooked Vegetable Salad

4-6 Servings

Poles under communism could not afford to throw away any food, so they would make a salad using the vegetables that had been cooked to make a broth. As carrots, celery root, and turnips were popularized in Poland by an Italian queen, this salad is known as "Italian." If you have not made a broth recently, replace carrots, parsley root, and potatoes with 1 can of mixed vegetables.

2 medium carrots, diced

1 cooked parsley root, diced

2-3 cooked medium potatoes, diced

1 can sweet green peas

2 apples, diced

2 pickles, diced

3 tablespoons mayonaise

1/2 teaspoon pepper

salt to taste

(optional) 1 tablespoon fresh parlesy, chopped

Mix together all diced vegetables, apples and pickles. Add mayonaise and pepper and mix. Salt to taste. Garnish with fresh parsley.
